Ingredient Notes

  • Rice Krispie Treats
    • You can use standard Rice Krispie Cereal for this recipe or you can also try using gluten free crispy rice cereal from a brand you trust to make these magical treats gluten free.
    • I don’t recommend buying a box of pre-made Rice Krispie treats for this recipe. They are quite small and if you try cutting them to make star shapes, you’ll end up with a lot of waste.
  • Candy Melts
    • Although similar to regular chocolate and chocolate chips, candy melts are designed specifically for dipping and dripping. Candy melts are made of sugar and oils, not cocoa butter like you’d find in regular chocolate. 
    • If you find your candy melts are too thick, add a small spoonful of vegetable shortening or vegetable oil at a time to thin it out. Never use water or milk; it will cause the mixture to seize and harden.
  • Marshmallows
    • Mini marshmallows will melt faster than larger marshmallows, but either one will work fine for this recipe. Fresh marshmallows are worth it! They make a big difference in the way the final product tastes.
  • Optional: Lemon Extract
    • Lemon extract is a concentrated liquid derived from fresh lemon zest and oil. It’s used to intensify the lemon flavor in recipes and provides a bright, citrusy aroma. It’s perfect for when you want to enhance the lemony essence of a recipe without adding extra liquid or texture to your dessert.
    • Unlike fresh lemons, which can vary in flavor and intensity, lemon extract offers a consistent and potent lemon taste that’s perfect for baked goods and desserts. Since lemon extract is concentrated, a little goes a long way. Start with a small quantity and adjust according to your taste preferences.

How To Make Magic Wand Rice Krispie Treats

Step 1: Prepare the Pan

Line a 9 x 13 inch pan with parchment paper to prevent sticking. This will help you remove the sheet of Rice Krispies later. 

Step 2: Melt the Butter

In a large pot, melt the 3 tablespoons of butter over low heat.

Step 3: Melt the Marshmallows

Once the butter is melted, add 6-7 cups of marshmallows to the pot. Stir continuously until the marshmallows are completely melted and well combined with the butter. This should result in a smooth, sticky mixture.

Take the marshmallows off the heat, then add one teaspoon of lemon extract to the melted marshmallows and stir thoroughly. 

Step 4: Add the Cereal

Add 6 cups of Rice Krispies cereal to the melted marshmallow mixture. Use a wooden spoon or spatula to gently fold and mix until the cereal is evenly coated with the marshmallow mixture.

I also added some extra marshmallows at this point to make the treats extra gooey, but I don’t necessarily recommend it for this recipe because it made the stars softer and they fell apart more easily as I was forming the stars.

Step 5: Transfer to Baking Dish

Transfer the cereal-marshmallow mixture into the lined baking dish. Use a buttered spatula or your hands (lightly greased with butter) to press the mixture evenly into the pan. You can press it down firmly but not too hard, so the treats remain soft and chewy.

Step 6: Cut and Cool

While your sheet of Rice Krispies are still warm, remove them from the pan and use a star shaped cookie cutter to press star shapes out of the Rice Krispies. You may want to cover your hands and the cookie cutter in more butter. 

To avoid waste, use the scraps of Rice Krispies and press them into the star cookie cutter firmly. 

Once the treats are cut, set them aside to cool completely and harden.

Step 7: Melt Candy Melts

Melt your yellow candy melts according to the package instructions. I put mine in a microwave safe bowl and used 50% power for one or two minutes until it was fully melted. 

Step 8: Add a Stick

Take the cooled treats and put a bit of candy melt on the end of a stick, then insert it into the star shaped Rice Krispie treat. You may have to reform it with your fingers if the shape changes at all. 

Place your Rice Krispy wands on a sheet of wax paper or parchment paper on top of a cookie sheet before you start decorating.

Step 8: Decorate

Once the sticks are secure, put the remaining melted yellow candy melts into a piping bag, or plastic bag and cut just the very tip off.

Drizzle yellow candy melts back and forth over your star-shaped Rice Krispies, the smaller you cut the hole, the thinner your stream of melted chocolate will be. I think the thinner drizzle looks nicer layered multiple times.

Immediately add sprinkles while the candy melts are still wet before they harden. Once they’ve cooled completely you can remove them from the parchment paper and tie a small bow or ribbon to the sticks.

Step 9: Serve

These treats are best enjoyed within a day or two of making them for the freshest taste and texture. Store the finished treats at room temperature in an airtight container for up to a week until you’re ready to serve them.

Rice Krispie Treat Troubleshooting

Can I use chocolate chips instead of candy melts?

I advise against using white chocolate chips for dipping your treats, as they are less likely to melt and can scorch more quickly in the microwave or double boiler. If that’s all you have, consider adding a spoonful of vegetable oil to the chocolate chips to make the melted chocolate smoother.

Can I use food coloring instead of colored candy melts?

If you’re using yellow food coloring with candy melts or other melted white chocolate it needs to be gel food coloring or powder. Regular liquid food coloring has a lot of water in it which will cause your chocolate to seize and harden. 

You’re better off using yellow colored candy melts in order to avoid issues.

Should I use treat sticks, skewers or popsicle sticks to make Rice Krispie treats on a stick?

Use treat sticks, a lollipop stick or popsicle sticks to make Rice Krispie treats on a stick like these Rice Krispie Wands’. Skewers are too thin, harder to hold, and slide off more easily.

Additional Tips

Work quickly when mixing the cereal with the marshmallow mixture, as it can start to harden as it cools.
