How To Make Chocolate Mermaid Bark
Prep
When you’re working with melted chocolate, it’s good to have things ready to go. Once you get started, you don’t want your chocolate to harden before you have a chance to make your creation.
Line a baking sheet with parchment paper or wax paper and get out the rest of your supplies like mermaid themed sprinkles, chocolate candy melts in three different colors, microwave-safe bowls, and plastic bags or piping bags.
Melt White Chocolate Candy Melts
Next, melt only the white chocolate candy melts. You can use a double boiler or a microwave-safe bowl according to the instructions on your candy melts.
I melted mine in the microwave by changing the settings to 50% power and stirring every 20 seconds to see if it was done.

If you overheat your candy melts they may burn and turn hard. If this happens, throw them out and start with a fresh bowl then use a shorter amount of time and lower setting on your microwave.
Spread On Parchment
Spread your white chocolate candy melts onto your parchment paper or wax paper. Use a spatula to make a fairly uniform shape like a square or rectangle.

Add Mermaid Sprinkles
While your white chocolate is still setting, add mermaid themed sprinkles on top. You can find mermaid themed sprinkles at your local craft store in the baking aisle. You can also find some like these sprinkles on Amazon.

Melt Colored Candy Melts
Melt your pink and teal candy melts in separate bowls. Once they are liquid, put them in a piping bag or small plastic bag and cut off the very tip of one corner of the bag.
Make sure you only cut a small amount so you can easily control how much chocolate is coming out.
Drizzle the melted pink and teal chocolate over your mermaid bark to give it a more layered look.

Cool The Mermaid Bark
You can put your mermaid bark in the fridge or leave it on the counter at room temperature to fully cool. I don’t recommend putting your tray in the freezer because when you take it out, the frozen chocolate might sweat and become cloudy looking.
Break The Mermaid Bark
I used a knife to break up my finished mermaid bark. You can also use your hands to snap it into pieces.

- What if my chocolate doesn’t melt?
- If your chocolate isn’t melting, you can turn up the heat on your double boiler slightly. Or try microwaving for a slightly longer time (30 second intervals instead of 20)
- Keep in mind the heat of your glass bowl or microwave safe bowl will slowly heat up your chocolate candy melts. Sometimes letting your candy melts sit in the warm bowl for a minute and stirring will help them soften and liquify.
- What if my chocolate burns?
- If your chocolate burns, you’ll need to start with fresh chocolate in a fresh bowl. When I’ve attempted to use the same bowl with fresh chocolate, the leftover burnt bits harden and ruin the batch.
- Burnt chocolate candy melts means your heat is too high, or it was in the heat for too long. Try a lower power setting on your microwave and a shorter time.
- What if I only have white chocolate?
- You can color your white chocolate candy melts with gel food coloring or powdered food coloring. You shouldn’t use regular water based food coloring because it will cause your chocolate to seize up and harden. (Chocolate candy melts are oil based and water & oil don’t mix well in this case.)
- What if I can’t find mermaid-themed sprinkles?
- First, check your local craft store in the baking section. You can also check Etsy and Amazon for mermaid themed sprinkles if you have the time to order them in.
