Ingredients
  

For the Chocolate Cupcakes:

  • - 1 1/2 cups all-purpose flour
  • - 1 1/2 cups granulated sugar
  • - 3/4 cup unsweetened cocoa powder
  • - 1 1/2 tsp baking powder
  • - 1 1/2 tsp baking soda
  • - 1 tsp salt
  • - 2 large eggs
  • - 3/4 cup buttermilk
  • - 1/4 cup vegetable oil
  • - 2 tsp pure vanilla extract
  • - 3/4 cup hot water

Chocolate Frosting:

  • - 1 cup unsalted butter softened
  • - 2/3 cup unsweetened cocoa powder
  • - 3 cups powdered sugar
  • - 1/3 cup milk more as needed
  • - 2 tsp pure vanilla extract

Step 1: Prepare the Chocolate Cupcakes

  • Preheat your oven to 350°F (180°C) and line a cupcake pan with cupcake liners. Either make a box of chocolate cake mix according to the package instructions or follow the steps below.
  • In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gradually add the hot water while continuing to mix. The batter will be thin, but that's okay.
  • Fill each cupcake liner about two-thirds full with batter.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  • Remove the cupcakes from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Step 2: Prepare the Chocolate Frosting

  • Use two cans of chocolate frosting or follow these instructions to make your own!
  • In a mixing bowl, sift the cocoa powder to remove any lumps.
  • In a separate bowl, beat the softened butter until creamy and smooth.
  • Add the sifted cocoa powder, powdered sugar, milk, and vanilla extract to the butter.
  • Start mixing on low speed to avoid a cloud of powdered sugar, then increase the speed to high and beat until the frosting is smooth and fluffy. If the frosting is too thick, add a bit more milk; if it's too thin, add more powdered sugar.

Step 3: Decorate the Monster Truck Cupcakes

  • Once the cupcakes are completely cool, use a piping bag with an open star tip to frost each cupcake with a generous swirl of chocolate frosting.
  • Sprinkle crushed chocolate Oreo cookies on top of each cupcake to create a dirt-like texture.
  • Finally, place a clean toy monster truck on top of each cupcake. Make sure the toy is secure and doesn't tip over. **This is only safe for children who are old enough to remove the toy before eating the dessert.** You can also add a racing flag-themed tooth pick as decoration.
