  • Popsicle sticks
  • Mermaid candy mold
  • Baking pan 13x9x2
  • Large sauce pan
  • Spatula
  • Small paintbrush
  • Toothpicks
  • Microwave safe bowls
  • Microwave safe cup
  • spoons
  • Wax paper
  • Cookie sheet

Ingredients

  • 6 cups Rice Krispie cereal
  • 3 tablespoons Butter
  • 1 package Marshmalows 10 oz. or 283 g
  • Edible lustre powder optional
  • Pink candy melts
  • White candy melts
  • Mermaid sprinkles
  • Blue sanding sugar

Instructions

Make Rice Krispies

  • In a large saucepan melt 3 tablespoons of butter on low heat then add 1 package of large or mini marshmallows (ten ounces or 283 grams). Stir the marshmallows until they are melted then remove mixture from heat.
  • Add 6 cups of Rice Krispies cereal and stir until everything is well coated. If your sauce pan isn’t large enough to fit all 6 cups, transfer your mixture to a large mixing bowl.
  • Grease a 13 x 9 x 2 inch pan with butter or cooking spray. Then press the Rice Krispie mixture into your pan using a buttered spatula or using a sheet of wax paper to press the top flat. You can alternatively cover the bottom of your pan with wax paper and grease only the sides for best results.
  • Cool your treats and cut them into 2-inch squares. If you’re having trouble cutting your squares, unmold your pan and then cut them with a buttered knife.

Make Chocolate Mermaid Tails

  • Melt Chocolate
  • First, melt your pink chocolate candy melts. Use a microwave-safe bowl and melt them according to the instructions on your candy melts.
  • I melted mine in the microwave by changing the settings to 50% power and stirring every 20 seconds to see if it was done. You can alternatively use a double boiler on your stove to melt them.
  • If you overheat your candy melts they may burn and turn hard. If this happens, throw them out and start with a fresh bowl then use a shorter amount of time and a lower setting on your microwave.
  • Pipe Chocolate Into Mermaid Tail Mold
  • Optional step: Use edible purple luster dust to line your silicone mermaid mold with shimmery powder. It will give your chocolate mermaid tails an extra shine and dual-tone color. You can do this before putting chocolate candy melts in the mermaid mold.
  • Pipe melted candy into your mermaid tail mold with a plastic bag or piping bag. Cut a small hole in the tip of your bag once it’s loaded with chocolate so you can control how much comes out at a time.
  • Use a toothpick to help spread the melted chocolate into every corner of the mold. I made the chocolate quite thick on the backside of my candy mold to reduce the chance that it would break as I removed the chocolate tails.
  • Cool And De-mold Mermaid Tails
  • Let your chocolate mermaid tails cool completely to room temperature. The smallest point of your chocolate mermaid tails will be the most prone to breaking, so go slow and take your time.

Coat Rice Krispie Treats In Chocolate

  • Melt white chocolate candy melts in a microwave safe glass cup or bowl. Dip your popsicle stick into the melted chocolate and then insert it into your Rice Krispie treat and allow it to cool and harden. Adding melted chocolate to the stick helps ensure it won’t fall off when you start dipping it.
  • You can use popsicle sticks, stiff paper straws, or reusable plastic straws as a base to help hold onto the treat.
  • Once your sticks are set, use a cup or bowl of melted white chocolate candy melts and a spoon to coat your rice krispie treats with white chocolate. Tap off the excess chocolate then place it on a baking sheet lined with a sheet of wax paper or parchment paper. Repeat the process with all your treats.

Decorate Mermaid Themed Rice Krispie Treats

  • Now that your cereal treats are coated in white chocolate, it’s time to decorate.
  • While your white chocolate candy melts are still wet, put blue sanding sugar near the top of your treat and mermaid sprinkles across the bottom of your treat. The baking tray will catch the excess sprinkles that fall off. I think the blue sanding sugar kind of looks like sea foam and gives it a more nautical vibe.
  • If your white chocolate hardens, the sprinkles won’t stick very well. You can drizzle some more melted white chocolate on top if this happens.
  • Add melted white chocolate to the back of your chocolate mermaid tails so they’ll stick to your treats.
