In a large saucepan melt butter (3 table spoons) on low heat then add 1 package of large or mini marshmallows (ten ounces or 283 grams). Stir the marshmallows until they are melted then remove mixture from heat.
Add 6 cups of crispy rice cereal and stir until everything is well coated. If your saucepan isn’t large enough to fit all 6 cups, transfer your mixture to a large mixing bowl.
Grease a 13 x 9 x 2 inch pan with butter or cooking spray. Then press the Rice Krispie mixture into your pan using a buttered spatula or using a sheet of wax paper to press the top flat. You can alternatively cover the bottom of your pan with wax paper and grease only the sides with nonstick cooking spray for best results.
Cool your treats and cut them into 2-inch squares. If you’re having trouble cutting your squares, unmold your pan and then cut them with a buttered knife.
Coat Rice Krispie Treats In Chocolate
Use a double boiler, or melt milk chocolate candy melts in a microwave safe glass cup or bowl. Dip your popsicle stick into the melted chocolate and then insert it into your Rice Krispie treat and allow it to cool and harden. Adding melted chocolate to the stick helps ensure it won’t fall off when you start dipping it.
You can use popsicle sticks, stiff paper straws, or reusable plastic straws as a base to help hold onto the treat.
Once your sticks are set, use a cup or bowl of melted milk chocolate candy melts and a spoon to coat your rice krispie treats with milk chocolate. Tap off the excess chocolate then place it on a baking sheet lined with a sheet of wax paper or parchment paper. Repeat the process with all your treats.
Decorate Bear Themed Rice Krispie Treats
Now that your cereal treats are coated in milk chocolate, it’s time to decorate.
While your milk chocolate candy melts are still wet, add two dark chocolate candy melts to the top as ears. Milk chocolate chips for eyes, brown Jimmies/sprinkles for eyebrows and a dark chocolate chunk for a nose.
Leave your treats to completely cool before adding the finishing touches. I added black royal icing with a toothpick to give the bear’s eyes and nose some definition. Then I used the black icing to outline a cute little happy mouth.
